Ever since I can remember, the smell and taste of a good Kalua Pork gets my mouth watering! Thankfully I came across an article awhile back in some magazine that gave me a shortcut to making a great Kalua Pork using a slow cooker with only three ingredients. Mahalo [Hawai‘ian for Thanks!] to Michelle Tam for that shortcut! I even made this for my wedding! As you can expect I I make my own twist to it by adding a forth ingredient if I am in the mood for a bit more vegetables.
I typically double or triple the recipe so that I can divide it up into several smaller portions and freeze for later use. The great thing about this Kalua Pork is that you can use it on its own, on a salad, on top of cauliflower rice or brown rice, or mixed in with stir fry Vegetables. The possibilities are endless.
Kalua Pork Keeney Style:
Prep time: 10 mins
Total time: 12 – 16 hrs
Serves: 8-10
Ingredients
- 3 slices of bacon
- 5 lbs Pork butt
- 1 1/2 Tablespoon Red Hawai‘ian Sea Salt
- 1/2 head of Green Cabbage (Optional)
Instruction
- Line the bottom of your slow cooker with the bacon strips (if doubling the recipe, line the bottom and walls)
- Evenly salt the pork with the Hawai‘ian sea salt. Place the pork butt(s) into the slow cooker on top of the bacon strips
- Set your slow cooker on low and walk away from it for about 12 – 16 hrs depending on your slow cooker. If you happen to have a whacked out one like me, cooking on low for 12 hrs can end up over cooking the meat. Over time you will find what work for you.
- Once the meat is cooked to your liking, remove the roast(s) from the cooker and place it on a plate. Then take two forks and shred the meat. Adjust the seasoning with some of the remaining cooking liquids.
- When you have the meat to the desired seasoning, toss out the rest of the cooking liquid and return the meat to the slow cooker to keep it warm.
- (Optional) Here is where I add in the Green Cabbage if I want. Using half of the Cabbage cut it into three sections, then slice it into 1/4 inch strips. Now stir in the cabbage to the shredded pork and let simmer for about 15 to 20 minutes.
Enjoy! Like I said above, you can do a lot of different things with this Kalua Pork.
